Lemon, Spinach and Parmesan Pasta

2020-04-30 - Lemon Spinach Parmesan Pasta

Serving Size: 1 bowl each

Ingredients

  • 200g Penne Pasta
  • 50ml Single Cream
  • 4 tsp Lemon Juice (bottled is fine)
  • 1 clove Garlic – crushed (Or a decent squeeze of tubed Garlic paste)
  • 3 tbsp Olive Oil
  • 1 Egg Yolk
  • 80g Spinach
  • 25g Parmesan / Grated Hard Cheese

Instructions

  1. Bring pasta to boil in a medium to large saucepan.
  2. While pasta is boiling, mix together the single cream, lemon juice, garlic and olive oil. Don’t panic if it looks strange to start with, it does all mix together to form a creamy sauce.
  3. Remove pasta from stove, drain and place back in pan.
  4. With the pan away from the heat, mix in the egg yolk until it starts to thicken, then add the spinach and mix until it begins to wilt.
  5. Place the pan back over a low-medium heat and stir in the creamy sauce made in step 2.
  6. Sprinkle in the parmesan while heating through.
  7. Serve alone or with Garlic-Chilli Toasts.
